Decaffeination Process
The Sugarcane Process is an eco-friendly method of decaffeinating coffee, popular in Colombia. Here's how it works:
- Ethyl acetate (E.A.) is created by fermenting sugarcane molasses.
- Green coffee beans are steamed to open their pores.
- The beans are soaked in the E.A. solution, which binds to the caffeine.
- After caffeine removal, the beans are steamed again to remove any leftover E.A.
Finally, the beans are dried and polished.
This process removes at least 97% of the caffeine. Any remaining E.A. (less than in a ripe banana) evaporates during roasting, leaving no trace in the final product.
The Sugarcane Process preserves the coffee's natural flavors while removing caffeine, making it a favorite among coffee lovers who want to reduce their caffeine intake.
